For the last-minute cooks or for anyone who suddenly realized that last-minute surprise guests are showing up on your doorstep, my confetti fried rice dish is a colorful addition to any dinner table. It’s a snap to whip up and makes for a festive spread. Make sure to use organic vegetables if available.

(Makes 4 servings)

Total cooking time (including preparation): 25 minutes

Ingredients:

  • 1 cup of cooked brown rice
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter
  • 1 clove of garlic
  • 1 teaspoon of diced green bell pepper
  • 1 teaspoon of diced red bell pepper
  • 2 tablespoons of diced scallions
  • 2 tablespoons of diced white onions
  • 2 – 3 tablespoons of light soy sauce

Directions:

Place your wok or skillet over medium heat. When hot, add the tablespoon of olive oil. Cut the clove of garlic in half and sauté for half a minute or less, then discard. Add butter to wok and add the red and green bell peppers, stirring until thoroughly coated. Add in diced onions. Continue stirring.

Add rice and soy sauce, then stir and coat well for about 5 minutes. Make sure you remove the pan from the heat when the vegetables are slightly crisp, so that the rice has a nice subtle snap to it.

Salt and pepper to taste, add scallions and you’re finished. Take a savory bite. Serve and enjoy!
